Preheat your oven to 375°F (190°C).
On a lightly floured surface, roll out your pizza dough into a large rectangle, approximately 12x14 inches.
Mix together the Dijon mustard and mayonnaise (if using) and spread evenly over the dough. Layer Swiss cheese, deli chicken ham, and cooked chicken breast down the center.
Fold the sides of the dough over the filling and roll tightly from one long edge to another. Pinch seams and ends to secure.
Place seam-side down on a baking sheet. Brush melted butter over the top and sprinkle with garlic powder, dried parsley, and grated Parmesan cheese.
Bake for about 25-30 minutes until golden brown and crispy.
Let rest for about five minutes before slicing. Serve warm with a simple green salad or dipping sauce.
