Chocolate Mint Protein Bites

A delicious and nutritious no-bake snack combining mint and dark chocolate, perfect for post-workout or as a healthy dessert.

Ingredients
  

  • 1 cup raw cashews soaked
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup vanilla or mint-flavored protein powder
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon peppermint extract
  • 2-3 tablespoons almond milk
  • 1 cup dark chocolate chips or chopped dark chocolate
  • 1 teaspoon coconut oil optional
  • 1-2 drops green food coloring optional
  • crushed chocolate or mint chocolate chips optional, for garnish

Method
 

  1. Combine the soaked cashews, shredded coconut, protein powder, maple syrup or honey, and peppermint extract in a food processor. Blend until smooth and creamy, adding almond milk as needed to achieve a dough-like consistency.
  2. If desired, blend in the green food coloring for a festive look.
  3. Roll the mixture into tablespoon-sized balls and place them on a parchment-lined baking sheet.
  4. Freeze the baking sheet for about 15–20 minutes to help set the bites.
  5. Melt the dark chocolate chips and coconut oil in a microwave-safe bowl, stirring every 30 seconds until smooth.
  6. Dip each mint ball into the melted chocolate until completely covered, allowing excess chocolate to drip back into the bowl.
  7. If desired, sprinkle crushed chocolate or mint chips on top before placing them back on the baking sheet.
  8. Refrigerate the coated bites for another 15–30 minutes until firm.
