Prepare the Chuck Roast
- Season the chuck roast with chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
- Place the seasoned roast in the slow cooker.
Cook the Roast
- Cover and cook on low for 6-8 hours or until the meat is tender and easily shredded.
Shred the Meat
- Once cooked, remove the roast from the slow cooker and shred the meat using two forks.
- Return the shredded meat to the slow cooker to soak up the juices.
Assemble the Tacos
- Warm the corn tortillas in a skillet over medium heat.
- Fill each tortilla with shredded chuck roast and top with lettuce, tomatoes, cheese, sour cream, and cilantro.
- Serve with lime wedges on the side.
