Method
Prepare the Dough
- In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
- Add olive oil, salt, and flour gradually, mixing until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
Shape and Bake
- Preheat the oven to 375°F (190°C).
- Once risen, punch down the dough and roll it out into a rectangle about 1/2 inch thick.
- Sprinkle the herb mixture evenly over the dough and roll it tightly into a log.
- Place the log seam-side down on a baking sheet and let it rise for another 30 minutes.
- Sprinkle shredded mozzarella and parmesan cheese on top before baking.
- Bake in the preheated oven for 20 minutes or until golden brown.
Cool and Serve
- Remove the bread from the oven and let it cool on a wire rack for 10 minutes.
- Slice and serve warm as a side or for sandwiches.
