Ingredients
  

Chicken and Sauce
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 packet ranch seasoning mix
  • 1 cup cream cheese softened
  • 1 cup chicken broth low sodium
  • 1 cup shredded cheddar cheese for topping
  • 1 cup bacon bits cooked and crumbled
  • 1 cup green onions sliced for garnish
Gnocchi
  • 1 pkg store-bought gnocchi about 16 oz

Method
 

Prepare the Chicken
  1. In a large skillet over medium heat, cook the chicken pieces until browned and cooked through, about 8-10 minutes.
  2. Add the ranch seasoning mix, cream cheese, and chicken broth to the skillet. Stir until the cream cheese is melted and the mixture is creamy.
Cook the Gnocchi
  1. In a large pot, bring salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top, about 2-3 minutes.
  2. Drain the gnocchi and add them to the skillet with the chicken and sauce. Stir to combine.
Serve
  1. Top the creamy chicken gnocchi with shredded cheddar cheese, bacon bits, and sliced green onions before serving.
