Creamy Crockpot White Chicken Chili

Ingredients
  

  • 1 lb boneless skinless chicken breasts trimmed of excess fat
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 24 oz chicken broth low sodium
  • 2 15oz cans great Northern beans drained and rinsed
  • 2 4oz cans diced green chiles 1 hot, 1 mild
  • 1 15oz can whole kernel corn drained
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 3/4 tsp oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 4 oz reduced fat cream cheese softened
  • 1/4 cup half and half
  • small handful fresh cilantro chopped

Method
 

  1. Add chicken breasts to the bottom of your slow cooker. Season them generously with salt, pepper, cumin, oregano, chili powder, and cayenne pepper.
  2. Top the seasoned chicken with diced onion, minced garlic, great Northern beans, green chiles, corn, chicken broth, and chopped cilantro. Stir everything together gently but thoroughly.
  3. Cover your crockpot and set it to cook on LOW for about 8 hours or on HIGH for about 3 to 4 hours.
  4. Once cooked, carefully remove the chicken from the slow cooker and shred it using two forks. Return shredded chicken back into the pot.
  5. Add softened cream cheese and half-and-half into your slow cooker. Stir well until combined and cook on HIGH for an additional 15 minutes.
  6. Give everything one last stir before serving. Ladle into bowls and top with your favorite garnishes.
