Prepare the Steak Filling
- Heat olive oil in a skillet over medium heat. Add sliced onions and bell peppers, sauté until soft, about 5 minutes.
- Add the thinly sliced ribeye steak to the skillet. Season with garlic powder, salt, and black pepper. Cook until the steak is browned and cooked through, about 5-7 minutes.
Assemble the Wraps
- Lay out a flour tortilla on a clean surface. Place a portion of the steak filling in the center.
- Top with provolone and cheddar cheese. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom.
Grill the Wraps
- Heat a grill or grill pan over medium heat. Melt butter on the grill.
- Place the wraps seam-side down on the grill. Grill for 3-4 minutes on each side until golden brown and crispy.
- Remove from the grill and let cool for a minute before slicing in half.
