Ingredients
  

  • 2 large cucumbers thinly sliced
  • 1 each red bell pepper thinly sliced
  • 1 each yellow bell pepper thinly sliced
  • 1 each orange bell pepper thinly sliced
  • ¼ cup red onion thinly sliced
  • ¼ cup fresh dill chopped
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • salt to taste
  • pepper to taste

Method
 

  1. Gather all your beautiful vegetables. In a large bowl, combine the thinly sliced cucumbers, red bell pepper, yellow bell pepper, orange bell pepper, and red onion.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, lemon juice, and honey until well combined.
  3. Pour the dressing over your cucumber and pepper mixture. Then add the chopped fresh dill. Gently toss everything together until all the vegetables are well coated.
  4. Season with salt and pepper to taste.
  5. Refrigerate the salad for at least 15 minutes before serving.
  6. Serve chilled as a refreshing side dish or enjoy it as a light main course.
