Dark Chocolate Raspberry Pie Bars

A delightful combination of dark chocolate and fresh raspberries in a simple yet impressive dessert.

Ingredients
  

  • 1 cup unsalted butter softened (2 sticks)
  • 2 cups all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 teaspoon salt
  • 1 cup dark chocolate chips
  • 14 oz sweetened condensed milk
  • 3/4 cup fresh raspberries semi crushed
  • 1 cup mini semi-sweet chocolate chips

Method
 

  1. Preheat your oven to 350F degrees and spray a 9x13 inch baking pan with non-stick baking spray.
  2. In a large bowl, mix the softened butter until creamy, then mix in the brown sugar, flour, and salt until crumbly.
  3. Press 1 3/4 cups of the crumb mixture into the prepared baking pan.
  4. Bake for 10 to 12 minutes or until lightly golden.
  5. In a small saucepan, stir sweetened condensed milk and dark chocolate chips over low heat until melted and smooth.
  6. Pour the chocolate mixture over the baked crust, sprinkle remaining crumbs, spoon semi-crushed raspberries, and top with mini chocolate chips.
  7. Bake for another 20 to 30 minutes until set, then cool before cutting into bars.
