Ingredients
  

Chicken and Vegetables
  • 1 lb boneless, skinless chicken breasts diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium red bell pepper chopped
  • 1 medium carrot diced
  • 1 tbsp olive oil
Beans and Broth
  • 2 cans black beans drained and rinsed
  • 4 cups chicken broth low sodium
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Toppings
  • 1 cup fresh cilantro chopped
  • 1 cup sour cream
  • 1 cup shredded cheese optional

Method
 

Prepare the Ingredients
  1. Dice the chicken breasts, onion, red bell pepper, and carrot. Mince the garlic.
  2. In a large pot, heat olive oil over medium heat.
Cook the Chicken and Vegetables
  1. Add the diced chicken to the pot and cook until browned, about 5-7 minutes.
  2. Add the chopped onion, garlic, red bell pepper, and carrot. Sauté for another 5 minutes until the vegetables are tender.
Add Beans and Broth
  1. Stir in the black beans, chicken broth, cumin, chili powder, salt, and pepper.
  2. Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes.
Serve the Soup
  1. Ladle the soup into bowls and top with chopped cilantro, sour cream, and shredded cheese if desired.
