Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Dill Pickle Mixture
  • 1 cup dill pickles, chopped
  • 1 cup dill pickle juice
Coating
  • 1 cup Parmesan cheese, grated
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
Oil
  • 2 tablespoons olive oil

Method
 

Prepare Chicken
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the chopped dill pickles and dill pickle juice. Add the chicken breasts and marinate for 10 minutes.
Prepare Coating
  1. In another bowl, mix together the Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, black pepper, and salt.
Coat Chicken
  1. Remove the chicken from the marinade and let excess liquid drip off.
  2. Coat each chicken breast in the Parmesan mixture, pressing down to adhere the coating.
Bake Chicken
  1. Place the coated chicken breasts in a baking dish and drizzle with olive oil.
  2. Bake in the preheated oven for 25 minutes or until the chicken is cooked through and the coating is golden brown.
Serve
  1. Remove from the oven and let rest for a few minutes before serving.
  2. Serve hot, garnished with additional dill pickles if desired.
