Prepare Chicken
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the chopped dill pickles and dill pickle juice. Add the chicken breasts and marinate for 10 minutes.
Prepare Coating
- In another bowl, mix together the Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, black pepper, and salt.
Coat Chicken
- Remove the chicken from the marinade and let excess liquid drip off.
- Coat each chicken breast in the Parmesan mixture, pressing down to adhere the coating.
Bake Chicken
- Place the coated chicken breasts in a baking dish and drizzle with olive oil.
- Bake in the preheated oven for 25 minutes or until the chicken is cooked through and the coating is golden brown.
Serve
- Remove from the oven and let rest for a few minutes before serving.
- Serve hot, garnished with additional dill pickles if desired.
