French Onion Soup Pasta Recipe

Ingredients
  

Pasta and Broth
  • 12 oz pasta such as fettuccine or linguine
  • 4 cups beef broth or vegetable broth
  • 1 cup dry white wine optional
Caramelized Onions
  • 4 large yellow onions thinly sliced
  • 2 tbsp butter unsalted
  • 1 tbsp olive oil
  • 1 tbsp sugar to aid caramelization
  • 1 tsp salt
Toppings
  • 1 cup gruyere cheese shredded
  • 1 cup parmesan cheese shredded
  • 2 tbsp fresh parsley chopped for garnish

Method
 

Caramelize the Onions
  1. In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions, sugar, and salt. Cook, stirring occasionally, for about 20-25 minutes until the onions are golden brown and caramelized.
  2. Once caramelized, set aside the onions.
Cook the Pasta
  1. In a large pot, bring water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
Combine Ingredients
  1. In the same pot, add the beef broth and white wine (if using). Bring to a simmer.
  2. Add the caramelized onions and cooked pasta to the broth. Stir to combine and heat through for about 5 minutes.
Serve
  1. Ladle the pasta and broth into bowls. Top with a generous amount of gruyere and parmesan cheese.
  2. Place under a broiler for 2-3 minutes until the cheese is bubbly and golden. Garnish with fresh parsley before serving.

Notes

For a vegetarian version, use vegetable broth and omit the cheese or use a plant-based alternative.
