Ingredients
  

Cod Fillets
  • 4 fillets cod about 6 ounces each
Quinoa Crust
  • 1 cup quinoa rinsed and drained
  • 2 cups water for cooking quinoa
  • 1 cup panko breadcrumbs for extra crunch
  • 2 tablespoons olive oil for mixing
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Garlic Lemon Sauce
  • 3 tablespoons butter melted
  • 3 cloves garlic minced
  • 1 lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 2 tablespoons parsley chopped, for garnish

Method
 

Prepare Quinoa
  1. In a saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and let cool.
Make Quinoa Crust
  1. In a mixing bowl, combine cooked quinoa, panko breadcrumbs, olive oil, garlic powder, salt, and pepper. Mix well until combined.
Prepare Cod
  1. Preheat the oven to 400°F (200°C). Place cod fillets in a baking dish and season with salt and pepper.
Add Crust
  1. Spread the quinoa mixture evenly over the top of each cod fillet, pressing down gently to adhere.
Bake Cod
  1. Bake in the preheated oven for 20 minutes, or until the cod is cooked through and the crust is golden brown.
Prepare Sauce
  1. While the cod is baking, melt butter in a small saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in lemon juice and zest.
Serve
  1. Remove cod from the oven, drizzle with garlic lemon sauce, and garnish with chopped parsley before serving.

Notes
