Method
- Combine the baby greens, grapefruit segments, and sliced avocado in a large bowl. Toss gently to ensure everything is mixed without bruising the avocado.
- Sprinkle the crumbly feta cheese and pepitas over the top of your salad mixture.
- In a small mixing bowl, combine the extra virgin olive oil, lemon juice, honey, sea salt, and ground black pepper. Whisk until fully combined.
- Drizzle the dressing over the salad just before serving. Toss gently again if needed to coat everything evenly. Serve immediately.
