Ingredients
  

Meatballs
  • 1 lb ground beef or lamb
  • 1 cup breadcrumbs preferably whole wheat
  • 1 large egg
  • 2 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 small cucumber grated and drained
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1 tbsp fresh dill chopped
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 tsp salt
Bowl Assembly
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1 cup mixed greens

Method
 

Prepare Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground beef, breadcrumbs, egg, garlic, oregano, salt, and pepper.
  3. Form the mixture into small meatballs, about 1 inch in diameter.
  4. Place the meatballs on a baking sheet and bake for 20-25 minutes until cooked through.
Make Tzatziki Sauce
  1. In a bowl, mix Greek yogurt, grated cucumber, garlic, olive oil, dill, lemon juice, and salt until well combined.
  2. Refrigerate for at least 10 minutes to allow flavors to meld.
Assemble the Bowl
  1. In each bowl, layer cooked quinoa, mixed greens, cherry tomatoes, cucumber, red onion, and meatballs.
  2. Drizzle tzatziki sauce over the top and sprinkle with feta cheese.
  3. Serve immediately and enjoy!
