Ground Turkey Rice Bowls with Bang Bang Sauce

Ingredients
  

  • 1 lb ground turkey
  • 1 Tbsp sesame oil or favorite cooking oil
  • 2-3 cloves garlic minced
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp soy sauce low sodium
  • 1-2 Tbsp sriracha
  • 2-3 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt more or less to taste
  • 2 tsp corn starch
  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½-1 Tbsp sriracha more to kick up the spice
  • 1 tsp rice vinegar
  • 2 tsp honey

Method
 

  1. Start by whisking together all of the bang bang sauce ingredients in a small bowl. Adjust the spice level to your liking and chill in the fridge until ready to serve.
  2. In a large skillet over medium-high heat, drizzle sesame oil and add ground turkey, breaking it into smaller pieces as it cooks until browned and reaches an internal temperature of 165°F.
  3. Once turkey is cooked, sprinkle in all remaining ingredients except for cornstarch. Allow to simmer for about 2–3 minutes while stirring occasionally. To thicken, sprinkle cornstarch over top and stir well.
  4. Assemble your rice bowls by layering in cooked rice followed by veggies, spooning the seasoned ground turkey mixture on top, and finishing with a drizzle of bang bang sauce. Garnish with sliced green onion and sesame seeds.
