Honey Chili Smashed Sweet Potatoes

A delightful balance of sweetness and spice, these smashed sweet potatoes are a perfect side dish for any meal.

Ingredients
  

  • 4 medium sweet potatoes scrubbed and sliced into thick rounds
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup or vegan honey alternative
  • 1 tablespoon chili paste or 1 tsp red pepper flakes
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste pepper
  • 1 tablespoon sesame seeds for topping
  • 2 tablespoons chopped fresh parsley or cilantro for topping
  • 1 lime optional, for serving

Method
 

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil the sweet potato slices in salted water for about 8-10 minutes until they are fork-tender but still holding their shape.
  3. Drain the boiled sweet potato slices and let them cool slightly before placing them on the prepared baking sheet. Gently press each slice with a fork or the bottom of a glass to flatten them slightly.
  4. In a small bowl, mix together olive oil, maple syrup, chili paste, smoked paprika, salt, and pepper. Brush this mixture generously over each smashed sweet potato slice.
  5. Roast your smashed sweet potatoes in the preheated oven for about 25–30 minutes, flipping them halfway through cooking.
  6. Once removed from the oven, sprinkle your smashed sweet potatoes with sesame seeds and freshly chopped herbs. Finish off with a squeeze of lime juice before serving.
