- Start by tossing all the mango cucumber salsa ingredients in a bowl. Set it aside until you're ready to assemble your tacos.
- Heat up a pan over medium-high heat and drizzle in some olive oil. Season your prawns with chipotle seasoning, garlic powder, and salt before adding them to the hot pan. Cook until they turn pink, about 1-2 minutes on each side.
- Warm up tortillas either in the microwave or over a hot dry pan on the stovetop.
- Layer some of the mango salsa on each tortilla, top with honey chipotle prawns, and finish with fresh coriander leaves. Serve immediately.
