Method
Marinate Chicken
- In a mixing bowl, combine honey, black pepper, and olive oil. Add chicken breasts and coat well. Marinate for at least 15 minutes.
Cook Pasta
- In a pot, bring salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.
Grill Chicken
- Heat a grill pan over medium-high heat. Grill marinated chicken for about 6-7 minutes on each side until cooked through. Remove and let rest before slicing.
Prepare Sauce
- In the same pot used for pasta, add heavy cream and bring to a simmer. Stir in parmesan cheese and spinach until cheese is melted and spinach is wilted. Add cooked pasta and mix well.
Assemble Panini
- Spread butter on the outside of ciabatta slices. Layer pasta mixture, sliced grilled chicken, and mozzarella cheese between two slices. Press in a panini press until golden brown and cheese is melted.
Serve
- Slice the panini in half and serve hot with a side salad or chips.
