Start by mixing together mayonnaise, apple cider vinegar, garlic powder, oregano, salt, and pepper in a large bowl. Stir in the shredded lettuce, thinly sliced onions, and banana peppers until well coated.
Layer turkey slices, turkey pepperoni, turkey chunks, and slices of provolone cheese inside each sub roll.
Preheat your oven's broiler. Place the assembled sandwiches on a baking sheet and broil for about 2–3 minutes until the cheese melts.
Add fresh tomato slices on top of each sandwich and spoon over your prepared grinder salad.
Gently close each sandwich and serve immediately while warm.
