Ingredients
  

  • 1 large Chicken Breast
  • 3/4 cup Cottage Cheese
  • 2 stalks Celery diced
  • 2 stalks Green Onions sliced
  • 1/2 cup Shredded Cheddar Cheese
  • 3 tbsp Chopped Fresh Jalapeno
  • 5 slices Bacon cooked and crumbled
  • 1/2 cup Sour Cream
  • 1/4 cup Chopped Fresh Jalapeno
  • 1/4 cup Fresh Cilantro
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Salt
  • 2 Limes Juice

Method
 

  1. Cook the chicken breast according to your preference—baking, boiling, or grilling. Once done, set aside to cool before chopping into small pieces.
  2. Chop the celery, green onions, and jalapenos while the chicken cools off.
  3. In a large bowl, combine the shredded chicken, diced celery, sliced onions, chopped jalapenos, crumbled bacon, cottage cheese, and shredded cheddar cheese. Stir well until evenly distributed.
  4. In a food processor or blender, combine all of the dressing ingredients including sour cream, chopped jalapeno, cilantro, onion powder, garlic salt, and lime juice. Blend until smooth.
  5. Pour the jalapeno dressing over your salad mixture and toss gently until everything is coated evenly.
  6. Serve your keto jalapeno popper cottage cheese chicken salad over fresh greens or on keto bread. Enjoy!
