Ingredients
  

Salad Base
  • 1 can chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 cup feta cheese crumbled
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, feta cheese, red onion, and parsley.
  2. Toss the ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  2. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
