Maple Dijon Roasted Carrots and Apples

Ingredients
  

  • 4 large carrots (about 1 pound)
  • 3 large apples (about 1 pound)
  • 1 onion
  • 5 cloves garlic (or 1 teaspoon garlic powder)
  • ¼ cup olive oil (or aquafaba)
  • ¼ cup maple syrup
  • 3 tablespoons stone ground dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon thyme

Method
 

  1. Prepare the ingredients by coring the apples and chopping them into ½” cubes, slicing the carrots into ¼” thick pieces, dicing the onion, and finely chopping the garlic.
  2. Make the glaze by whisking together olive oil, maple syrup, dijon mustard, salt, black pepper, and thyme in a large bowl.
  3. Combine the chopped carrots, apples, onions, and garlic with the glaze, tossing until well coated.
  4. Preheat the oven to 425°F (220°C) and spread the mixture evenly on a baking sheet. Roast for about 15 minutes, flipping halfway through.
  5. Continue roasting for another 10 to 15 minutes until the carrots are tender and the glaze has caramelized.
