Ingredients
  

Protein
  • 1 pound ground beef preferably lean
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
Seasonings
  • 2 tablespoons olive oil for cooking
  • 2 cloves garlic minced
  • 1 teaspoon oregano dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Cook the Beef
  1. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 5-7 minutes.
  2. Drain excess fat if necessary.
Add Vegetables
  1. Add minced garlic, bell pepper, and zucchini to the skillet. Stir-fry for about 5 minutes until vegetables are tender.
  2. Add cherry tomatoes and spinach, and cook for another 3-4 minutes until spinach wilts.
Season and Serve
  1. Stir in oregano, salt, and black pepper. Mix well to combine all ingredients.
  2. Serve hot, optionally over rice or with pita bread.
