Ingredients
  

Protein
  • 1 lb ground chicken
Vegetables
  • 1 cup chopped bell pepper any color
  • 1 cup chopped zucchini
  • 1 cup chopped spinach fresh or frozen
Fats
  • 2 tbsp olive oil for cooking
  • 1 cup crumbled feta cheese for topping
Condiments
  • 1 cup sliced black olives pitted
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp dried oregano
Spices
  • 1 tsp garlic powder
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Cook the Chicken
  1. In a large skillet, heat olive oil over medium heat. Add ground chicken and cook until browned, about 5-7 minutes.
  2. Season with garlic powder, salt, and black pepper.
Add Vegetables
  1. Add chopped bell pepper, zucchini, and spinach to the skillet. Stir and cook for another 5-7 minutes until vegetables are tender.
Mix in Olives and Feta
  1. Stir in sliced olives, lemon juice, and dried oregano. Cook for an additional 2-3 minutes.
  2. Remove from heat and sprinkle crumbled feta cheese on top before serving.
