Ingredients
  

Meatloaf Ingredients
  • 1 lb ground chicken
  • 1 cup breadcrumbs preferably Italian seasoned
  • 1 large egg
  • 1 cup Parmesan cheese grated
  • 4 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup milk
Topping Ingredients
  • 1/4 cup ketchup
  • 1 tbsp Parmesan cheese grated
  • 1 tsp Italian seasoning

Method
 

Prepare the Meatloaf
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, egg, Parmesan cheese, minced garlic, parsley, salt, pepper, and milk.
  3. Mix until just combined, being careful not to overmix.
  4. Transfer the mixture to a loaf pan and shape it into a loaf.
Add the Topping
  1. In a small bowl, mix together ketchup, Parmesan cheese, and Italian seasoning.
  2. Spread the ketchup mixture evenly over the top of the meatloaf.
Bake the Meatloaf
  1. Bake in the preheated oven for 60 minutes, or until the internal temperature reaches 165°F (74°C).
  2. Let the meatloaf rest for 10 minutes before slicing.
