Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts pounded to even thickness
Marinade
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Corn Topping
  • 2 cups corn kernels fresh or frozen
  • 1/2 cup mayonnaise
  • 1/2 cup cotija cheese crumbled
  • 1/4 cup cilantro chopped
  • 1 tablespoon lime juice freshly squeezed
  • 1/2 teaspoon smoked paprika

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove chicken from marinade and discard the marinade. Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F (75°C).
Prepare the Corn Topping
  1. In a skillet over medium heat, cook corn kernels until they are slightly charred, about 5-7 minutes.
  2. In a bowl, mix together cooked corn, mayonnaise, cotija cheese, cilantro, lime juice, and smoked paprika.
Serve
  1. Slice the grilled chicken and place it on a serving platter.
  2. Top with the corn mixture and serve immediately.
