Ingredients
  

Chicken and Orzo
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup orzo pasta
  • 2 cups chicken broth low sodium
  • 1 cup Monterey Jack cheese shredded
  • 1 cup bell pepper diced
  • 1 cup zucchini diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Cook Chicken
  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with garlic powder, onion powder, paprika, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes.
  2. Remove the chicken from the skillet and set aside.
Cook Vegetables and Orzo
  1. In the same skillet, add the diced bell pepper and zucchini. Sauté for about 3-4 minutes until softened.
  2. Add the orzo and chicken broth to the skillet. Bring to a boil, then reduce heat to low and cover. Cook for about 10-12 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the broth.
Combine and Serve
  1. Return the cooked chicken to the skillet and mix well. Sprinkle the shredded Monterey Jack cheese on top, cover, and let it melt for about 2-3 minutes.
