Method
Prepare the Pancake Mixture
- In a mixing bowl, combine flour, sugar, and baking powder. In another bowl, whisk together milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.
- Let the pancake batter rest for about 5 minutes.
Cook the Sausage
- In a skillet over medium heat, cook the breakfast sausage until browned and crumbled. Drain excess fat and set aside.
Assemble the Casserole
- Preheat the oven to 350°F (175°C). Grease a baking dish. Pour half of the pancake batter into the baking dish, spreading it evenly.
- Layer the cooked sausage and cheddar cheese over the batter, then pour the remaining pancake batter on top.
Bake
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
Serve
- Remove from oven and let cool for a few minutes. Drizzle with maple syrup before serving.
