Parmesan Crusted Chicken

Ingredients
  

  • 2 large chicken breasts
  • 1/4 cup flour
  • 2 large eggs
  • 2/3 cup panko breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 teaspoon Italian seasoning heaping
  • 1/2 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • 3 tablespoons olive oil divided

Method
 

  1. Preheat the oven to 400F and position the rack in the top third of the oven.
  2. Cut each chicken breast in half lengthwise to create four thinner pieces. Pat them dry with paper towels and sprinkle both sides with garlic powder, salt, and pepper.
  3. Prepare three bowls: one with flour, another with beaten eggs, and a third with panko breadcrumbs, parmesan cheese, and Italian seasoning.
  4. Add two tablespoons of olive oil to an oven-proof skillet over medium heat.
  5. Coat each piece of chicken in flour, then dip into the egg mixture, and finally press into the breadcrumb mixture until well-coated.
  6. Carefully add two pieces of coated chicken into the hot skillet and cook for about 2–3 minutes per side until golden brown.
  7. After frying all pieces, arrange them back in the skillet and transfer it to the preheated oven. Bake for about five minutes until fully cooked through.
  8. Once out of the oven, let them rest for a moment before serving hot.
