Peanut Butter Oatmeal Chocolate Chip Cookies

Ingredients
  

  • 1/2 cup unsalted butter softened to room temperature, NOT melted
  • 1/2 cup brown sugar packed
  • 1/3 cup granulated sugar
  • 1/2 cup smooth peanut butter smooth, commercially prepared
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup old-fashioned oats AKA large rolled oats
  • 1 cup chocolate chips divided

Method
 

  1. Preheat your oven to 350F (180C). Line your cookie sheets with baking paper or silicone baking mats.
  2. In a large bowl, beat together the softened butter, brown sugar, granulated sugar, and smooth peanut butter until well combined.
  3. Beat in one large egg along with the vanilla extract.
  4. Gradually add in the flour, baking powder, baking soda, and salt. Mix gently before increasing speed.
  5. Stir in the old-fashioned oats by hand.
  6. Gently fold in three-fourths of a cup of chocolate chips into your dough.
  7. Using about three tablespoons of dough per cookie ball, form dough balls.
  8. Place each dough ball on lined cookie sheets about two to three inches apart and bake for about ten to twelve minutes.
  9. Remove from the oven and let them cool on the cookie sheets for at least ten minutes.
