Method
Prepare the Chicken
- Grill the chicken breasts until fully cooked, about 6-7 minutes per side. Let cool and shred or dice.
Assemble the Flatbreads
- Preheat the oven to 400°F (200°C). On a baking sheet, place the flatbreads.
- Spread a generous layer of pesto sauce on each flatbread.
- Evenly distribute the cooked chicken over the pesto.
- Sprinkle mozzarella cheese on top of the chicken.
Bake
- Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
Add Toppings
- Remove from the oven and top with halved cherry tomatoes, chopped basil, and grated parmesan cheese.
- Slice and serve warm.
