  • 2 cups granulated sugar
  • 3/4 cups water
  • 1/2 cup liquid glucose/light corn syrup
  • few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Method

  1. Grease a piece of baking paper and place it on a tray or baking sheet.
  2. Insert bamboo skewers into all of the apples and set them aside.
  3. In a saucepan, combine sugar, water, corn syrup, and black food coloring. Set over medium heat. Stir gently until everything is well mixed.
  4. Allow the mixture to come to a simmer while stirring occasionally to dissolve the sugar completely.
  5. Once the sugar has dissolved, stop stirring! Use a wet brush to wash down the sides of the pot.
  6. Cook the caramel until it reaches hard crack stage (150ºC/310ºF on a candy thermometer).
  7. Carefully dip each apple into the caramel mixture. Tip the pan slightly if needed.
  8. Place each dipped apple on your prepared baking sheet and allow them to cool and harden before serving.
