Ingredients
  

Casserole Base
  • 2 cups cooked shredded chicken Rotisserie chicken works well
  • 1 can green chiles Diced
  • 1 cup sour cream Can substitute with Greek yogurt
  • 1 cup shredded cheese Cheddar or Monterey Jack
  • 8 oz corn tortillas Cut into strips
Seasoning
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

Prepare the Oven and Dish
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish with cooking spray or oil.
Mix the Filling
  1. In a mixing bowl, combine the shredded chicken, green chiles, sour cream, cheese, and all seasonings.
Layer the Casserole
  1. Spread a layer of tortilla strips on the bottom of the baking dish.
  2. Spoon half of the chicken mixture over the tortillas.
  3. Add another layer of tortilla strips and the remaining chicken mixture.
  4. Top with remaining tortilla strips and sprinkle additional cheese on top.
Bake the Casserole
  1. Cover the dish with aluminum foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
  1. Let the casserole cool for a few minutes before slicing and serving.
