Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts about 6 ounces each
Mushrooms
  • 8 ounces cremini mushrooms sliced
Wine Sauce
  • 1 cup dry white wine such as Sauvignon Blanc
  • 1 cup chicken broth low sodium
  • 2 tablespoons heavy cream optional for richness
  • 2 tablespoons olive oil for cooking
  • 2 cloves garlic minced
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme

Method
 

Prepare the Chicken
  1. Season the chicken breasts with salt and black pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
Make the Mushroom Sauce
  1. In the same skillet, add the sliced mushrooms and cook for about 5 minutes until they are browned and tender.
  2. Add minced garlic and thyme, cooking for an additional minute until fragrant.
  3. Pour in the white wine and scrape the bottom of the skillet to deglaze, letting it simmer for about 3-4 minutes until reduced by half.
  4. Stir in the chicken broth and let it simmer for another 5 minutes.
  5. If using, stir in the heavy cream and return the chicken to the skillet, cooking for another 2-3 minutes until heated through.
Serve
  1. Serve the chicken topped with the mushroom wine sauce, garnished with additional thyme if desired.
