Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup red bell pepper diced
  • 1 cup cucumber diced
  • 1 cup carrot shredded
  • 1 cup green onions sliced
  • 1 cup fresh cilantro chopped
  • 1 cup spicy cashews chopped
Ginger Lime Dressing
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon soy sauce or tamari for gluten-free
  • 1 tablespoon maple syrup or honey
  • 2 tablespoons olive oil extra virgin
  • 1 clove garlic minced

Method
 

Prepare Quinoa
  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  2. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and let it cool.
Make Dressing
  1. In a small bowl, whisk together grated ginger, lime juice, soy sauce, maple syrup, olive oil, and minced garlic until well combined.
Assemble Salad
  1. In a large mixing bowl, combine the cooled quinoa, red bell pepper, cucumber, carrot, green onions, and cilantro.
  2. Pour the ginger lime dressing over the salad and toss to combine.
  3. Top with chopped spicy cashews before serving.

Notes
