Ingredients
  

Salad Base
  • 8 cups fresh spinach washed and dried
  • 1 cup cherry tomatoes halved
  • 1 small red onion thinly sliced
  • 1 cup cucumber sliced
Toppings
  • 6 slices bacon cooked and crumbled
  • 4 large eggs hard-boiled and sliced
  • 1/2 cup feta cheese crumbled
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Eggs
  1. Place eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 10 minutes.
  2. After 10 minutes, transfer eggs to an ice bath for 5 minutes, then peel and slice.
Cook the Bacon
  1. In a skillet over medium heat, cook bacon until crispy, about 5-7 minutes. Remove and crumble.
Make the Dressing
  1. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, minced garlic, salt, and pepper.
Assemble the Salad
  1. In a large bowl, combine spinach, cherry tomatoes, red onion, and cucumber.
  2. Top with crumbled bacon, sliced eggs, and feta cheese.
  3. Drizzle with dressing and toss gently to combine.
