Method
Prepare the Spaghetti Squash
- Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle the inside of each half with olive oil and sprinkle with salt and pepper.
- Place the squash halves cut-side down on a baking sheet and roast for 30-35 minutes, or until tender.
Make the Filling
- In a mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, salt, and pepper. Mix until well combined.
Stuff the Squash
- Once the squash is cooked, use a fork to scrape the flesh into spaghetti-like strands.
- Mix the spaghetti strands with the spinach filling until well combined.
- Spoon the filling back into the squash halves.
Bake the Stuffed Squash
- Return the stuffed squash to the oven and bake for an additional 10-15 minutes, until the filling is heated through and slightly golden.
- Remove from the oven and let cool for a few minutes before serving.
