Strawberry Spinach Salad with Strawberry Balsamic

A refreshing salad combining strawberries, avocado, and feta cheese, perfect for summer.

Ingredients
  

  • 5 ounces organic spinach
  • 2 cups strawberries, halved about 8 ounces
  • 1 large avocado, sliced
  • ½ small red onion, thinly sliced
  • ½ cup feta crumbles
  • cup raw sliced almonds
  • ¼ cup chopped shelled roasted pistachios
  • 3 tablespoons balsamic vinegar
  • ¼ cup olive oil
  • 1 clove garlic, grated or finely minced
  • ½ teaspoon dijon mustard
  • ½ tablespoon strawberry jam or jam of choice
  • freshly ground salt and pepper to taste

Method
 

  1. In a mason jar or small bowl, add all of the dressing ingredients. Shake or mix well to combine until everything is nicely blended. Taste and adjust seasoning with salt and pepper.
  2. Toast the almonds on the stovetop in a pan over medium heat for about 2-5 minutes until they’re slightly golden brown.
  3. In a large bowl, add fresh spinach as the base. Layer on halved strawberries, sliced avocado, thinly sliced red onion, feta crumbles, toasted almonds, and chopped pistachios.
  4. Drizzle some dressing over the salad or serve it on the side. Toss gently to coat all ingredients before serving.
