Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
Marinade
  • 1 cup fresh orange juice about 3 oranges
  • 1/4 cup soy sauce low sodium
  • 1/4 cup honey or maple syrup
  • 2 cloves garlic minced
  • 1 teaspoon ginger freshly grated
  • 1 teaspoon black pepper freshly ground
Garnish
  • 1 tablespoon fresh parsley chopped
  • 1 orange orange slices for serving

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together the orange juice, soy sauce, honey, minced garlic, grated ginger, and black pepper.
  2. Place the chicken thighs in a large resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or up to 2 hours.
Roast the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. Remove the chicken from the marinade and place it in a roasting pan. Pour the remaining marinade over the chicken.
  3. Roast in the preheated oven for 35-45 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
Serve
  1. Remove the chicken from the oven and let it rest for 5 minutes.
  2. Garnish with chopped parsley and orange slices before serving.
