Method
Prepare the Marinade
- In a mixing bowl, whisk together the orange juice, soy sauce, honey, minced garlic, grated ginger, and black pepper.
- Place the chicken thighs in a large resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or up to 2 hours.
Roast the Chicken
- Preheat the oven to 400°F (200°C).
- Remove the chicken from the marinade and place it in a roasting pan. Pour the remaining marinade over the chicken.
- Roast in the preheated oven for 35-45 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
Serve
- Remove the chicken from the oven and let it rest for 5 minutes.
- Garnish with chopped parsley and orange slices before serving.
