Ingredients
  

Potato Mixture
  • 2 cups russet potatoes peeled and cubed
  • 1 cup cheddar cheese shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup bread crumbs for coating
Dipping Sauce
  • 1 cup sour cream
  • 2 tablespoons hot sauce to taste

Method
 

Prepare the Potatoes
  1. Boil the cubed potatoes in a large pot of salted water until tender, about 15 minutes.
  2. Drain the potatoes in a colander and let them cool slightly.
Mix Ingredients
  1. In a mixing bowl, mash the potatoes until smooth.
  2. Add cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until combined.
  3. Form the mixture into small bite-sized balls.
Coat the Bites
  1. Set up a breading station with flour, beaten eggs, and bread crumbs.
  2. Roll each potato ball in flour, dip in egg, and coat with bread crumbs.
Fry the Bites
  1. Heat oil in a frying pan over medium heat.
  2. Fry the potato bites in batches until golden brown, about 3-4 minutes per side.
  3. Remove and drain on paper towels.
Prepare Dipping Sauce
  1. In a small bowl, mix sour cream and hot sauce until well combined.
Serve
  1. Serve the potato bites hot with the dipping sauce on the side.
