Ingredients
  

Rice Base
  • 1 cup white rice uncooked
  • 2 cups water
Beef Mixture
  • 1 lb ground beef or turkey
  • 1 tsp olive oil for cooking
  • 1 tsp taco seasoning
  • 1 cup black beans canned, drained
  • 1 cup corn canned or frozen
Toppings
  • 1 cup shredded lettuce
  • 1 medium tomato diced
  • 1 cup cheddar cheese shredded
  • 1/2 cup sour cream
  • 1/4 cup salsa

Method
 

Cook the Rice
  1. In a pot, bring 2 cups of water to a boil. Add 1 cup of rice, reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed.
Prepare the Beef
  1. In a large skillet, heat 1 tsp of olive oil over medium heat. Add 1 lb of ground beef and cook until browned, about 5-7 minutes.
  2. Stir in 1 tsp of taco seasoning, 1 cup of black beans, and 1 cup of corn. Cook for an additional 5 minutes, stirring occasionally.
Assemble the Bowl
  1. In each bowl, layer cooked rice, beef mixture, and top with shredded lettuce, diced tomato, cheddar cheese, sour cream, and salsa.

Notes
