Tasty Baked Breakfast Tacos

Ingredients
  

  • 4 slices bacon
  • 2 tbsp canola oil
  • 4 cups potatoes, cut into 1-inch cubes
  • 2.5 tbsp Old El Paso™ original taco seasoning mix (from 6.25 oz container)
  • 8 soft corn tortillas 6 inch
  • 8 eggs well beaten
  • 0.5 cup Monterey Jack cheese, shredded (2 oz)

Method
 

  1. Preheat your oven to 400°F (200°C). In a large skillet over medium heat, cook the bacon slices until crispy. Remove them from the skillet and let them drain on paper towels while you sauté the potatoes in the remaining bacon grease along with canola oil.
  2. Add the cubed potatoes and taco seasoning mix to the skillet. Stir well to ensure each piece is coated evenly. Cook for about 10–15 minutes or until they are tender and golden brown.
  3. Lay out each tortilla on a baking sheet. Spoon some of your seasoned potato mixture onto each tortilla and top it with beaten eggs followed by crumbled bacon and shredded cheese.
  4. Place your assembled tacos in the preheated oven and bake for about 20 minutes or until the cheese is melted and bubbly.
  5. Remove from the oven and let them cool slightly before serving. Top off with fresh salsa, avocado slices, or cilantro if desired.
