Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • to taste pepper
  • 3 tablespoons cornstarch
  • 1/2 medium onion
  • 2 cups broccoli florets
  • 1/2 red bell pepper
  • 1/2 cup chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar or apple cider vinegar
  • 1/4 cup brown sugar packed
  • 1 tablespoon cornstarch
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic minced
  • 3 tablespoons olive oil divided

Method
 

  1. Prep the ingredients before you start cooking - cut the veggies into bite-size pieces.
  2. In a medium bowl, combine all sauce ingredients and whisk until smooth.
  3. Cut the chicken breasts into 1-inch pieces, season with garlic powder and pepper, and toss with cornstarch.
  4. Heat two tablespoons of olive oil in a skillet, add chicken, and cook until browned and cooked through.
  5. If needed, add a small splash of oil and sauté onions until softened.
  6. Add broccoli florets and red bell pepper slices, cooking until tender-crisp.
  7. Return the cooked chicken to the skillet, add the sauce, and stir until thickened.
