Method
- Start by slicing the cucumbers thinly and placing them in a large mixing bowl. Add the thinly sliced red onion and shredded carrots into the bowl with the cucumbers.
- In a separate bowl, combine the rice vinegar, sugar or honey, minced garlic, salt, and red chili flakes if using. Whisk everything together until well blended.
- Pour the dressing over the prepared vegetables in your mixing bowl. Gently toss everything together until all ingredients are coated with the dressing.
- Sprinkle chopped cilantro and crushed peanuts over your salad before serving.
