Ingredients
  

  • 2 large cucumbers thinly sliced
  • 0.5 medium red onion thinly sliced
  • 1 medium carrot shredded or julienned
  • 0.25 cup fresh cilantro chopped
  • 0.25 cup crushed peanuts optional
  • 0.25 cup rice vinegar
  • 2 tablespoons sugar or honey
  • 1 clove garlic minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon red chili flakes optional

Method
 

  1. Start by slicing the cucumbers thinly and placing them in a large mixing bowl. Add the thinly sliced red onion and shredded carrots into the bowl with the cucumbers.
  2. In a separate bowl, combine the rice vinegar, sugar or honey, minced garlic, salt, and red chili flakes if using. Whisk everything together until well blended.
  3. Pour the dressing over the prepared vegetables in your mixing bowl. Gently toss everything together until all ingredients are coated with the dressing.
  4. Sprinkle chopped cilantro and crushed peanuts over your salad before serving.
