Ingredients
  

Vegetables
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 celery stalks celery diced
  • 1 medium bell pepper diced
Legumes
  • 1 cup dry lentils rinsed and drained
Liquids
  • 6 cups vegetable broth low sodium
  • 1 tablespoon olive oil
Spices
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon thyme dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Greens
  • 2 cups spinach fresh, chopped

Method
 

Prepare the Ingredients
  1. Dice the onion, garlic, carrots, celery, and bell pepper.
  2. Rinse and drain the lentils.
Combine in Crockpot
  1. In the crockpot, combine the diced vegetables, lentils, vegetable broth, olive oil, and spices.
Cook the Soup
  1. Cover and cook on low for 6 hours or until lentils are tender.
Add Greens
  1. Stir in the chopped spinach during the last 15 minutes of cooking.
Serve
  1. Taste and adjust seasoning if necessary. Serve hot.
