Preheat your oven to 400 degrees F.
In a large bowl, add the potatoes, grape tomatoes, and broccoli. Pour in 2 tablespoons of extra virgin olive oil and toss them together until coated. Season with salt and pepper along with 1 tablespoon of minced garlic, 1 teaspoon of za’atar spice, and half a teaspoon of coriander. Toss again until all veggies are nicely seasoned. Transfer them to a large baking sheet.
Pat your salmon dry using paper towels. Season both sides generously with salt and pepper before drizzling a little extra virgin olive oil over the top. Spread the remaining minced garlic evenly onto the salmon fillet and sprinkle on the remaining za’atar spice and coriander.
Cut your seasoned salmon into four equal pieces and place them on the same prepared baking sheet alongside the vegetables. Drizzle another generous splash of extra virgin olive oil over everything if desired.
Bake in your preheated oven for about 15 to 16 minutes. Remove from heat and squeeze fresh lemon juice over everything. Sprinkle more za’atar on top for finishing touch.
