  • 1 cup warm milk
  • 1 tablespoon sugar (optional)
  • 2 teaspoons instant yeast
  • 4 cups all-purpose flour (or half whole wheat)
  • 2 teaspoons salt
  • 2 tablespoons olive oil
  • 3 tablespoons za’atar spice
  • 5 tablespoons extra virgin olive oil

Instructions

  1. In a large mixing bowl, combine warm water, warm milk, sugar, and instant yeast. Stir gently and let sit for about 5 minutes until foamy.
  2. Add flour, salt, and olive oil to the yeast mixture. Stir until combined and knead on a floured surface for about 5-7 minutes until smooth.
  3. Place the dough in a greased bowl, cover with a towel, and let rise in a warm place for about 1 hour until doubled in size.
  4. After rising, punch down the dough and divide into four equal pieces. Roll each piece into rounds about ¼ inch thick.
  5. Heat a non-stick skillet over medium heat and cook each flatbread for 2-3 minutes on each side until golden brown.
  6. Brush with extra virgin olive oil and sprinkle za’atar on top while still warm.
