  • 1/4 cup grated Parmigiano-Reggiano cheese

  • 1 tablespoon chopped fresh parsley (or 1/2 tablespoon dried)
  • 1 teaspoon chopped fresh basil (or 1/2 teaspoon dried)
  • 1 teaspoon chopped fresh oregano (or 1/2 teaspoon dried)
  • Pinch of salt and pepper
  • Tomato sauce (for dipping)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lightly greasing it.
  2. Shred the zucchini, then drain it thoroughly using a clean towel to remove excess moisture.
  3. In a medium mixing bowl, combine the drained zucchini, grated garlic, breadcrumbs, grated cheese, egg, chives, parsley, basil, oregano, salt, and pepper. Mix until well combined.
