  • 1 pound ground beef
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cups pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 1 green bell pepper, chopped
  • 1/2 cup sliced mushrooms

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
  3. Add onions, bell pepper, and mushrooms to the skillet; sauté until softened.
  4. In a large bowl, mix drained zucchini with eggs and Parmesan cheese until well combined.
  5. Spread half of the zucchini mixture in a greased 9×13 inch baking dish.
  6. Layer the sautéed meat and vegetable mixture on top.
  7. Add the remaining zucchini mixture evenly over the meat layer.
  8. Pour pizza sauce over everything, then top with mozzarella cheese.
  9. Bake for 25-30 minutes or until golden and bubbly.
  10. Allow to rest for 10-15 minutes before serving.
